I love this time of year. The fall harvest of colorful roots is coming in and there are many beautiful vegetables to choose from at Green Top Coop. This is a recent selection that includes: carrots, daikon radish and rose-heart radish. I picked up rutabaga and turnips yesterday along with Kabocha squash from Cook Farm. His squash is incredible. If you have not tried it, I highly recommend it.
We eat some of the radish and carrots and raw, but most of these fall roots get roasted in olive oil with a little salt, pepper and thyme added. The heat softens the texture and flavor. You can add whatever seasoning you like and experiment with different size pieces and amounts of time in the oven. With a little experimenting you can create something that appeals to you. Of course this is aided by softening your perspective around food and flavor too.
